The housemade Italian sausage with roasted peppers and tomato polenta ($17) fell flat. Unfortunately, Cibo really faltered when it came to entrees. All were a tad gummy, but had decent flavor. The gnocchi trio included spinach and ricotta-filled gnocchi with bolognese sauce truffle-filled in a browned butter sage sauce and traditional potato in a pesto cream with shrimp ($15). The meat sauce was a little thick, but nicely balanced between the rich meat and sweet tomato. The al ceppo bolognese - “thick pasta tubes” in a ragu of veal, beef and pork ($15) - was well received at the table. Pastas followed more traditional recipes. And I liked the pairing with earthy mushrooms and salty slivers of prosciutto. Radicchio is tricky to work with - it”s often too bitter - but cooking it with truffle tamed the bitterness. The pizza Cibo - prosciutto, crimini mushrooms and truffled radicchio ($14) - was pretty tasty too. The pizza Costolette - spicy short ribs, strips of Yukon potato, caramelized onion and goat cheese purée and rosemary ($16) - was much better. The cheese was applied thin and baked into a plastic coat on top. The crust was thin and hard, almost like a cracker. On both visits, we shared pizza as an appetizer for the table. I”m not crazy about cucumber, but the flavor was tempered by a flavorful white balsamic and basil vinaigrette. This version ditched the traditional tomato in favor of cucumber, paired with mozzarella di bufala and ciabatta bread. I was surprised how much I enjoyed the panzanella salad ($8). I appreciated that the octopus didn”t have an overpowering smoky flavor, but the strange combination of textures - chewy, yet gelatinous - was a turnoff. The burst of tart juice from the pomegranate seeds was a nice accent.īarbecued octopus has become one of the “it” foods around town and I was curious about Cibo”s take on this dish - barbecued baby octopus with cannellini bean and arugula salad ($11). There are lots of great, new worship songs today, but in the vast pool of new songs, many are not suitable for congregational singing by virtue of their rhythms (too difficult for the average singer) or too wide of a range (consider the average singer-not the vocal superstar on stage). We are singing songs not suitable for congregational singing. People worship best with songs they know, so we need to teach and reinforce the new expressions of worship. I advocate doing no more than one new song in a worship service, and then repeating the song on and off for several weeks until it becomes known by the congregation. Indeed, we should be singing new songs, but too high a rate of new song inclusion in worship can kill our participation rate and turn the congregation into spectators. With the release of new songs weekly and the increased birthing of locally-written songs, worship leaders are providing a steady diet of the latest, greatest worship songs. Worship is moving to its pre-Reformation mess. Simply put, we are breeding a culture of spectators in our churches, changing what should be a participative worship environment to a concert event. What has occurred could be summed up as the re-professionalization of church music and the loss of a key goal of worship leading – enabling the people to sing their praises to God.
